Dear yogis!
Today I want to share this scrumptious low carb gluten free banana bread recipe with you. It has no added sugar and it tastes heavenly! The trick is to get very very ripe bananas to make it sweet enough. The blueberries also add some sweetness to it. I have done it twice, the first time I only used coconut flour, but the second time I run out of coconut flour so I used half oats, half coconut flour and it worked well, though it was slightly more wet, as the coconut flour absorbs more liquid than the oats.

Ingredients:

3 very ripe bananas, mashed
1/2 cup coconut flour
1 tsp baking powder
1 tsp cinnamon

1 Tbsp honey (optional)
3 eggs
2 Tbs melted coconut oil
1-2 handful blueberries


Preheat the oven to 180ºC and line a loaf pan with baking paper. In a blender, mix the bananas, coconut flour, baking powder, cinnamon, eggs and coconut oil. Once it’s well combined, gently fold in the blueberries. Pour the batter into the loaf pan. Bake for 30-35 minutes, depending on your oven, and let rest for 10-15 minutes before serving.
